Scrump-dillyumtious Vanilla Bean Cake



2 Cups All purpose flour

1 1/2 cups Sugar

3 Teaspoons Baking Powder

1/2 Salt

4 Egg whites from large Eggs

1/2 Cup Shortening

1 Cup 2% Milk

2 Large Eggs

2 Vanilla Beans (slice open and slide knife along bean to gather the beans for batter. Toss casing of bean or save for Vanilla Sugar)



Combine flour, sugar, baking powdered, salt, shortening, milk, and vanilla beans in a large mixing bowl. Mix at low speed for 2 minutes. Scrape bowl. Add egg whites and mix at high speed until fluffy and smooth, approximately 2 minutes.


Put in Cupcake liners or 9x13 cake pan. Bake cake pan at 350 degrees for approximately 25 minutes or until toothpick comes out clean. Cupcakes bake for 20-25 minutes.  Cool 10 minutes and then remove cupcakes from pan.


Frost with my Cream Cheese Frosting and add Green or Red Food coloring for a Christmas effect if desired.
