Holiday Peanut Butter Blossom Cookies

1 1/4 cups All purpose Flour (spooned & leveled)
1/2 teaspoon Baking Soda
1/4 teaspoon course salt
1/2 cup Unsalted Butter - Room Temp.
1/2 Cup packed light or dark Brown Sugar
1/4 Cup Granulated Sugar
1 Large Egg
3/4 cup creamy Peanut Butter 
1 teaspoon Pure Vanilla Extract
24 Chocolate Kisses - Unwrapped

1/2 cup granulated sugar
Mix in Colored Sanding Sugar for the Holiday

Whisk the flour, baking soda, salt together and set aside. 

In a large mixing bowl (Paddle attachment), beat butter for 1 minute on high speed until creamy. Switch to medium-high speed & beat in the brown sugar & granulated sugar until smooth. About 2-3 minutes. 

Scrape down the sides and bottom of the bowl as needed. Add peanut butter, Vanilla, & beat until combined. 

Add in flour mixutre, beat on low until combined. Cover & chill for minimum of an hour. 

Preheat oven to 350. Get your cookie sheets ready with Silicone Baking Mats or parchment paper. Or if you still use non-stick spray. 

Using a 1" scoop, scoop out portion and roll between hands & roll through colored sugar. Place on cookie sheet. Bake 11-13 minutes. Remove from oven and wait 5 minutes befroe carefully putting a Hershey's Kiss and press carefully. 

Allow to cool well because it melts the choc for a while. You can speed up process by placing in freezer to set up.
